Harvest moon howler3 out of 5 for heat, this sauce is made with freshly picked then fermented chilies with our own sweet pepper paprika added for depth! The yeast profile adds a warm sourdough flavor to the unique zing to the sauce. Delicious on breakfast sandwiches!

Romanian red garlic3 out of 5 for heat, we've created a garlic bomb, that's back by popular demand! There's a ton of Wisconsin grown Romanian Red garlic and fermented chilis in this wild sauce! There's a nice balance of fermented pepper and bread notes.

Prairie Sunrise3 our of 5 for heat, we smoke about half of the freshly picked chillies with applewood before fermenting. This creates a subtle smoky flavor that doesn't overpower, but lends to the complexity! In addition to that, we added blueberries and a little bit of pineapple to bolden the finish. This may be our favorite sauce yet!

Two brothers making hot sauce
Casey and Drew Nelson grew up learning about cooking and gardening by spending summers with their Grandma Nelson. She taught them lots about plant identification and most importantly the joys of harvest and creativity! Years down the line, Casey's interest in fermenting wines and kombucha was met with Drew's interest in growing interesting varieties of hot peppers. With several years of experimentation under their belts, Nelson Brothers Hot Sauce was created with peppers grown from saved seeds, tended gardens, and lots of love for bold flavors! We use real ferments and the best ingredients!
Aunt Rosanne, Liz Happ, and SWEET SEASON FARM
Since the beginning, our Aunt Rosanne has been helping us by giving us beautiful pepper transplants that she started in Eldora, IA. Black Hungarians, Poblanos, and massive Jalapenos have been keeping our hot sauce operations afloat each season! She also has a neat shop called Backwoods Gallery.
In 2023, we decided to start purchasing peppers from Carly and Ethan at Sweet Season Farm near Decorah. In 2024, we realized how pro these guys are at growing immaculate plants, and decided to contract with them for growing the majority of our peppers! Seriously some of the best peppers I've ever seen! You need to try their produce if you haven't yet. Catch them here!
Liz Happ, Casey's wonderful wife has been an integral part of Nelson Brothers in so many ways! From watering seedlings, to tending toiling in the garden, to harvesting, helping with the insane amount of labor in cutting peppers, and dealing with all the hot sauce fumes in our house, she's the reason we are still making this happen. WE LOVE YOU LIZ!!!
